I really like Moroccan cuisine, especially the mix of spices and fruits which compliment each other so well. This is a simple marinade which works really well with lamb and can be used for frying or BBQing.
For four people, you will need:
- 4 British lamb loin chops
- 2 apricots
- 2 tablespoons pomegranate molasses
- 1½ teaspoons chilli powder
- ½ teaspoon ground coriander

½ teaspoon paprika
Peel the apricots and chop them into very fine pieces.
In a small bowl, mix the apricots with the molasses and spices, together with a little salt and pepper.
Coat both sides of the lamb with the marinade, putting the chops on a plate. Pour the rest of the marinade over the top, cover with clingfilm and pop in the fridge for at least two hours (overnight is even better!)
You need to cook both sides for around 6 minutes each. This can be done on the BBQ just off the direct heat or in a frying pan over a medium heat.
