How do you do a whole chicken on the BBQ? Like this! A simple rub, a can of beer and away you go.
You will need:
- 1 medium sized whole chicken
- 1 standard sized can lager, half drunk
- 1 teaspoon each of paprika, ground cumin, chilli powder, salt and black pepper
- 2 tablespoon olive oil
Ideally, you need to do this on a gas BBQ as it needs to be on for a while and you need to control the heat zones.
Preheat half your BBQ (so half your burners) so it’s around 180 degrees. This is roughly medium burner heat.
Drink half the lager in the can. In a bowl put the oil and all the seasoning, stirring to a paste. Smother all the chicken skin in the paste, including the wings and legs.
Stand the chicken up on the beercan (you stick it up it’s bum!) Put this on your BBQ on the section that doesn’t have burners lit underneath. Put the cover on and BBQ for 1 hour and 20 minutes, ensuring you test the meat by putting in a skewer and seeing if the juices are clear.
You can then do your other BBQ items as the chicken will keep warm with the lid open, as you cook everything else.
