Recipe – Moroccan Spiced Fish

Fish is really good for you but finding simple recipes which allow you to use cheaper fresh fish are difficult to find. Try this easy slice mix to have a really healthy and flavoursome meal centre.

For two people you will need:

  • 2 boned and skinned white fish, such as cod or basa
  • 1 tablespoon Garlic-infused olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon chilli flakes
  • 1 teaspoon paprika
  • Take the fish and pat dry with kitchen towel. Mix the spices in a small bowl with a sprinkle of salt and pepper.
  • Brush the oil over both sides of the fish. Sprinkle a teaspoon of the spice mix over each fish and rub in. Place on a plate and pop in the fridge for at least half an hour.
  • Heat a non-stick frying pan over a medium heat. Add the fish spice side up, and cook for four minutes on each side.
  • Serve with salad and either potato salad or jacket potato for a lovely summery dish.
