Fish is really good for you but finding simple recipes which allow you to use cheaper fresh fish are difficult to find. Try this easy slice mix to have a really healthy and flavoursome meal centre.
For two people you will need:
Take the fish and pat dry with kitchen towel. Mix the spices in a small bowl with a sprinkle of salt and pepper.
Brush the oil over both sides of the fish. Sprinkle a teaspoon of the spice mix over each fish and rub in. Place on a plate and pop in the fridge for at least half an hour.
Heat a non-stick frying pan over a medium heat. Add the fish spice side up, and cook for four minutes on each side.
Serve with salad and either potato salad or jacket potato for a lovely summery dish.
- 2 boned and skinned white fish, such as cod or basa
- 1 tablespoon Garlic-infused olive oil
- 1 teaspoon ground coriander
- 1 teaspoon chilli flakes
- 1 teaspoon paprika
