Here’s a new option for burgers for the BBQ, a lighter choice than beef burgers, made with turkey and with Italian herbs for a very Mediterranean taste.
To make 4 or 5, you will need:
- 500g turkey mince
- 2 courgettes, peeled and grated
- 2 shallots, finely chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 tablespoon cornflour
- 1 teaspoon dried chilli flakes
- 100g grated mozzarella (optional)
In a large bowl, add all the ingredients except for the courgette.
Take a handful of courgette at a time and squeeze it over kitchen towel to get rid of as much water as possible and add it to the bowl. Repeat this until all added.
Season the bowl with salt and pepper and using your hands, mix thoroughly.
Divide into four or five equal amounts and press together firmly, flattening into a fat burger. Place on a plate and cover with cling film. Place in the fridge for at least an hour before using, you can do this the day before.
BBQ on a medium to high heat, moving to medium once sealed and beginning to brown. It needs around 20 minutes in total to cook through. Serve in a bun with mayo and rocket.
If you fancy a little plunge, add a sprinkle of grated mozzarella for the final five minutes of BBQing.
