I recently asked in Facebook for everyone’s favourite weekend breakfast and the lovely Tracy Harkness told me about her favourite, which is a kind of Full English in a single pan. So I thought I’d have a go! It really was simple and very yummy.
Per person/serving, you will need:
- 4 cherry tomatoes, halved
- Around a dozen button mushrooms
- 3 rashers unsmoked back bacon
- 2 eggs
- 2 slices of bread
- Handful of flat leaf parsley
In a small frying pan, fry the bacon, tomatoes and mushrooms in a little oil until the bacon starts going crispy and the mushrooms are very soft. Stir so there is a good even distribution of the stuff in the pan.
Crack in two eggs to the middle of the pan and let the whites move around to create a kind of breakfast omelette, moving things around if you need to. Keep the yolks intact. Season with black pepper and a little freshly milled salt.
Pop the bread in the toaster while the eggs are cooking.
Once the eggs are cooked with the yolk still a bit runny, serve with the toast and a few flat leaf parsley leaves on the side if you like.
