My oldest son Niclas started university this week and during our conversations about his cooking ability he told me about a couple of really great recipes perfect for students – and parents worried their kids aren’t going to eat! Check this out alongside my other Student Special recipes which I’ll be doing over the next month.
All recipes feed 3-4, so can feed groups or the main can be chilled for reuse the next day. I also show a cost based on Tesco Value or standard ingredient.
To feed 3-4, you will need:
- 375g diced chicken
- Two small red onions
- 100g mushrooms (buy loose to get the exact weight)
- 300g white rice
- 1 tin chicken soup
- Salt & pepper
I estimate the cost is £3.48 in total, a maximum of £1.16 per serving.
Chop the onions and fry in a little oil in a big frying pan. Once browning a little, add the diced chicken (most pre-diced chicken has quite a large dice size so cut them all in half) and fry to brown all sides. Make sure you stir regularly.
Add the chicken soup and stir. Season with a little salt and pepper.
Slice the mushrooms and add to the pan, stirring in well.
Boil a large pan with salted water. Add 300g of white rice, stir and simmer until cooked. While the rice if cooking, stir the chicken mix regularly.
Serve the chicken on a bed of rice.
