When the weather turns hot, you can’t beat a good ice cream! The queues for the local ice cream vans can be big, so I played about with a simple recipe which apparently a lot of vegans swear by! It creates a really lovely ice cream without the need for an ice cream maker and also uses up any bananas that are too ripe. It takes at least two hours, with freezing.
You will need:
- 5 very ripe bananas, the browner the better!
- 3 heaped teaspoons cocoa powder
Slice the bananas into thick slices and put in a plastic tub, then into the freezer for at least two hours.
Once frozen, blitz the bananas in the food processor until smooth. Then add the cocoa powder and blitz again.
Serve immediately or refreeze.
This is a dairy free and vegan recipe as shown but as an option you can add chocolate chips however this will introduce a dairy element.
