Recipe – Ham & Cheese Mini Frittatas

Quick and easy ‘throw together’ family meals are a wonderful thing, especially if they use stuff you probably have knocking about. These are great kid-friendly meal centres which are easy to do and you can mix the ingredients to anything your kids like.

To make 6, for 2 grown ups and 2 kids, you will need:

  • 6 medium or 5 large eggs
  • 1 small onion
  • 4 tablespoons milk
  • 2 slices of ham
  • 100g grated cheddar, or diced slices
  • 50g frozen peas
  • Salt, pepper and half a teaspoon of parsley

Pre-heat the oven to 160 degrees. Grease six cups of a muffin tin with butter.

Slice the ham into short, thin strips. Finely dice the onion. Divide these, the cheese and the peas between the muffin tin cups. Don’t overfill, you may not use all the ingredients.

Gently beat the eggs, mix in the milk with some salt and pepper, plus the parsley. Pour this into the cups, trying to make them all even.

Bake for around 17 minutes or until just set. Serve with salad and new potatoes.

You can swap the cheese, ham and peas for anything your kids like. Swap out the ham and you can make it veggie too. Sweetcorn and broccoli work particularly well, and don’t worry about not having the ham case – they work really well without it.
