Recipe – Chocolate Volcano Cupcakes

These are great fun, for Halloween, Bonfire Night or any time really! The base chocolate mix can be used for any cupcake recipe, it’s moist inside and crispy outside, just decorate as you see fit!

For 12 you will need:

  • 115g self-raising flour
  • 150g Stork baking margarine
  • 150g golden caster sugar
  • 3 large eggs
  • 30g cocoa powder
  • 1 heaped teaspoon baking powder

For the icing:

  • 50g icing sugar
  • 1 teaspoon orange food colouring
  • Splash of boiling water

Preheat the oven to 180°c. Put 12 cupcake cases on a tray.

Please all the cake ingredients in a bowl and whisk with an electric mixer until a lighter, creamy consistency.

Pour into the cupcake cases, a good dessert spoon in each.

Bake for 20 minutes and then cool on a wire rack.

Once completely cool, make the icing. Add the icing sugar and colouring to a bowl. Add a tiny splash of boiling water and mix. Never overestimate the amount of water you need, you always need much less than you think!

You want a very thick icing, only add more water if you really need to.

Place into a piping bag and snip the end off to a very small hole. Pipe over the top of the cupcakes in squiggly lines like lava flows. You can add sprinkles in you have some of a suitable colour mix (we used black and orange). Enjoy!
