A friend of mine introduced me to this amazing soup, originally a peasant soup from Portugal, it’s both healthy and full of flavour. The mix of spring greens and chorizo make for a hearty soup, low in calories but not scrimping on taste.
For 6-8 portions, you will need:
- 2 brown onions, roughly chopped
- 4 cloves of garlic, crushed
- 150g chorizo, finely diced
- 6 large potatoes, peeled and diced into small cubes
- 2 pints chicken stock
- 300g spring greens, sliced and chopped
- 2 bay leaves
In a large saucepan, gently fry the onions and garlic in a little olive oil until they are soft and glossy. Add the chorizo, stir and fry for a couple more minutes.
Add the potatoes and stir really well so thy get coated in the chorizo colour. This will absorb flavour too. Pour over the stock, add the bay leaves and a generous sprinkle of salt and black pepper. Simmer gently until the potatoes are cooked. Remove the bay leaves.
Using a slotted spoon, remove around half the potatoes and put them in a bowl. Mash them and then return to the soup, stirring so that the mash acts as a thickening base.
Add the spring greens and simmer for another 5 minutes. Serve straight away or you can chill the soup for a day or two and reheat. I think the flavour actually improves over time.
