Everyone in our house loves Italian food as many families do. It’s easy to throw together and as long as the ingredients are good quality you’ll get a great family meal that disappears quickly! This is a fab combo of ingredients which would end up on a pizza but actually makes a brilliant pasta dish.
To feed 4-6 you will need:
- 90g Milano Salami slices, cut into quarters
- 500g good quality penne dried pasta
- 1 large red onion, finely chopped
- 3 cloves garlic, finely chopped
- 4 anchovy fillets (from a tin), finely chopped
- 2 tins chopped tomatoes
- 100g asparagus, cut into 1 inch lengths
- 3 heaped dessert spoons mascarpone
- Bunch of fresh basil
- Ground black pepper
- Buffalo mozzarella ball, torn to pieces
Cool the pasta in a large saucepan of boiling salted water as per the instruction on the pack. When done, strain, retaining a cup of the water, and place back in the saucepan with the lid on but off the heat.
In a large deep frying pan, add a good glug of olive oil and fry the salami until the edges go crisp. You may need to do this in two batches. Place on a plate when done.
Add more oil to the pan and gently fry the onion and garlic for a few minutes until the onion goes soft. Add the anchovies and fry for another minute.
Add the tins of chopped tomatoes, wash out the tins with a little water and add that too. Simmer for a couple of minutes. Add the mascarpone together with the cup of pasta water and season generously with the pepper. Simmer for another couple of minutes.
Add the asparagus and most of the basil, which you should chop up first. Retain a number of whole leaves to one side for garnishing. Simmer for 3-4 minutes.
Add the pasta into the sauce and stir so that the pasta is well covered. Serve onto plates or pasta bowls. Sprinkle over the salami crisps and add a few pieces of mozzarella plus some basil leaves.
