Recipe – Raisin and Coconut Flapjacks

Flapjacks are the easiest things to make, they really are. So versatile too, you could swap the coconut and raisins for anything! My friend makes his with blueberries and they look lush.

For 8-10 thick flapjacks you will need:

  • 250g porridge oats
  • 130g butter
  • 3 tablespoons golden syrup
  • 80g soft brown sugar
  • 100g Californian raisins
  • 70g desiccated coconut

Grease a baking tin roughly 20x20cm and line with baking parchment. Preheat the oven to 200 degrees.

Put the butter, syrup and sugar in a pan and gently heat so it all melts. In a separate bowl place all the dry ingredient and mix up.

When the sugar and butter has melted, pour over the dry ingredients and combine with a wooden spoon until well mixed.

Spoon into the baking tin and press firmly down with the spoon. Bake for 15 minutes until golden brown.

Let cool a little and cut up the flapjacks before turning out onto a rack.
