Mug cakes. A rediculous US invention that makes no sense until you make them and then you suddenly wonder why you didn’t do them before as they’re so easy an delicious!
These are my two favourites, a chocolate sponge cake with running middle and a jam doughnut cake. Yum!
Chocolate Mug Cake
For one mug, you will need:
- 4 tablespoons plain flour
- 2 teaspoons cocoa powder
- Half teaspoon baking power
- 2 tablespoons sugar
- Pinch of salt
- 5 tablespoons milk
- 1 tablespoon vegetable oil
Whisk it all together in a small bowl and pour it into a mug ensuring it isn’t more than half way up the side. You can add some chocolate chips on top before microwaving if you’d like.
Microwave for 70 seconds. Told you it was easy!
Jam Doughnut Cake
For one mug, you will need:
- 4 tablespoons plain flour
- Pinch of ground cinnamon
- Half teaspoon baking power
- 2 tablespoons sugar
- 1 tablespoon milk
- 2 tablespoons vegetable oil
- 1 egg yolk
- 3 drops of vanilla extract
- 2 teaspoons of strawberry or raspberry jam, preferably seedless
Combine the sugar and cinnamon. Put 4 teaspoons of this into a mug, adding the egg yolk, milk, vanilla and oil. On top, add the flour and baking powder. Mix this well until it’s really smooth.
Drop the jam into the middle of the mixture and sprinkle 1 teaspoon of the sugar and cinnamon on top. Microwave for 60 seconds. Once done you can sprinkle more sugar or jam (or both!) on top.
Both of these are really hot when they come out the microwave so if you’re giving them to kids, leave them for a bit, they shouldn’t collapse too much. Or turn them out into a dish, Jack couldn’t wait!
